Chicken Fried Rice, basically fried rice is a staple in most Japanese and Asian restaurants. This homemade rice is even better than restaurants. Fried Rice can be made with Chicken, Prawns, Pork however for vegetarians this can also be made with Mushrooms, Soya Beans, Tofu, Paneer (Cottage Cheese)
Add 2 1/2 cup of water
Add Chicken pieces
Add 1 tspn salt
Add 4 to 6 cloves of Garlic
Cook the chicken till it is completely cooked
Remove chicken and keep it on a bowl to cool down
* Keep the chicken stock for making Rice.
Once chicken is cool, shred the chicken and make small pieces and throw away the bones.
Clean and Wash the rice
Use the chicken stock (which was kept aside while making chicken)
Add rice. If required Put some more water for cooking
Cook the rice until it is cooked properly and keep it aside
Take big saucepan and Sesame oil
Add chopped Ginger and Garlic
Add chopped Onion
Cook for a 30 sec
Add all the vegetables except spring onion (i.e Chopped Capsicum , Beans, Carrot, Mushroom, Capsicum and Cabbage )
Add salt as per taste
Add Freshly Pounded Black Pepper
Make a space in between ( i.e. move veggies aside and make space in the center)
Break all three eggs in the center
Stir it very slowly so you get small chunks of eggs
Add shredded Chicken pieces and mix well
Add Spring Onion (keep some for garnishing the Chicken Fried Rice at the end.)
You may add some sauce like soy sauce or vinegar if you like
Now add cooked rice and mix it well for a 30 to 40 secs
Your Chicken Fried Rice is ready. Serve Hot and add spring onion for garnishing.
